Ingredients
  • 1 package Ground Beef (93% lean)
  • 4 small Sweet Potatoes
  • 4 cups Spinach
  • 1 Onion
  • 1/2 cup diced Tomatoes
  • 1/4 cup Feta
  • 2 small Avocados
  • 1 can Diced Pickles
  • 8 tbsp Chipotle Ranch Dressing
  • Seasonings
  • Salt
  • Pepper
  • Paprika
  • Chili Powder
Instructions
  1. Prep sweet potatoes: Peel and cut sweet potatoes in a fry shape. Then, place them in a medium size bowl and season with salt, pepper, paprika, and chili powder.
  2. Prep ground beef: Set stovetop to medium heat and spray pan with cooking spray. Then add ground beef, mince it and season with salt, pepper, paprika, and chili powder.
  3. Cook sweet potatoes: Cook in the air fryer for 10 minutes on 400 degrees, flipping halfway through.
  4. While sweet potatoes and ground beef are cooking, chop up onions and tomatoes. Then add onions, tomatoes, and sweet potatoes on a medium size pan and set to low heat. Season with salt and pepper.
  5. After everything is done cooking, add ground beef, sweet potatoes, and veggies in 4 bowls or meal prep containers. Add avocado, feta, pickles, and drizzle chipotle ranch on top.
  6. Serve & enjoy!
