Cottage Cheese Rice Cakes

Lightly salted rice cakes made up of cottage cheese, cucumber & everything seasoning. A light easy snack that is low calorie, high in protein, and so delicious. It is only 4 ingredients and takes less than 5 minutes to make!

I just recently tried cottage cheese and loved the taste, so I had to try this rice cake combination. Even though you can’t taste the rice cakes, I love how they provide extra crunch and texture. I also have tried these on cheddar rice cakes and they are absolutely amazing!

One of my all time favorite seasonings is Everything Seasoning. It is so tasty and perfect to add to anything savory. If you don’t have it (which you need to go buy it, you won’t regret it) you can always use salt & pepper.

I use Good Culture cottage cheese. I love it because they’re no gums, added hormones, or artificial flavoring. It is also very thick and creamy. Plus, one serving contains 14 grams of protein!

Cottage Cheese:

Cottage cheese is available in various percentages of milk fat. It is a good source of protein and provides calcium and vitamin D. in fact a 1/2 cup serving provides almost as much protein as 2 oz of meat.

Cucumbers

Cucumber is low in calories but high in vitamins and minerals providing vitamin k, vitamin c, and Potassium. It has >90% water content which can aid in hydration.

  1. Take out all of the ingredients.
  2. Spread cottage cheese.
  3. Cut up cucumber (about 1/4 inch).
  4. Add to rice cake and sprinkle seasoning.
  5. Serve & enjoy!
