Buffalo Chicken Street Tacos

Healthy, easy and just a little spicy, what’s not to love? These Buffalo chicken street tacos are delicious and perfect for any lunch or dinner. All you need is a few ingredients to assemble!

Street tacos are one of my favorite recipes. Not only are they delicious but they are so easy to make (especially if I have leftover chicken). I love using random ingredients in my fridge and throwing it on a tortilla to create a flavorful meal.

There are also so many ways to create street tacos (and I’ve tried a lot), but buffalo chicken has to be my all-time favorite. The buffalo sauce I swear by is Primal Kitchen’s. It is so GOOD!

What I love about Primal Kitchen is their products are gluten free, dairy free, made with good non inflammatory oils, and high-quality ingredients. A lot of sauces have additive sugars, and inflammatory oils, while Primal’s kitchen has 0 grams of sugar. The sauce is overall high quality and worth every penny.

Like I said I love using random ingredients I find in my fridge and my favorite ones to go with buffalo chicken are plain greek yogurt, spinach, avocados, and pico. I also like to add black beans or peppers if I have any available.

These are also great to make when you have leftover chicken. I make my chicken all at once, so I have protein in the fridge when I need it. It’s so convenient to just microwave chicken and throw everything together on tortilla; it only takes 5 minutes!

My favorite tortillas are Sietes. Like Primal Kitchen, Siete is made with real ingredients and doesn’t contain any inflammatory oils and additives like most tortilla brands. Most tortillas you find at a grocery store contain a long list of ingredients that is tough to pronounce. No thank you, I like to know what I’m consuming and prefer real ingredients. There are some foods just worth investing in.

I also love to use Greek Yogurt as a substitute for sour cream (they taste exactly the same). Greek yogurt is low calorie and high in protein. It is perfect for added flavor and a little extra protein!

How these ingredients benefit our bodies?

Chicken

Chicken is a low fat meat that can be used as a protein source in a variety of recipes. It is full of B vitamins and contains phosphorus and selenium.

Greek Yogurt

Greek yogurt is high in protein and calcium and provides a complete source of essential amino acids. Choose yogurt low in added sugar to maximize health benefits.

Spinach

Spinach is a vegetable full of insoluble fiber. It contains vitamins and minerals including Vitamin A, C, K, iron and calcium. It also contains plant compounds including quercetin and lutein and has a host of health benefits such as reducing cancer risk, oxidative stress and blood pressure.

Avocado

Avocados have become a kitchen staple more so than in the past and there are good reasons! They are high in healthy fats, fiber, potassium, magnesium, folate, and vitamins C, K, E and B6. Avocados have been found to have positive links to reducing risk of heart disease and are beneficial for gut health and are high in anti-inflammatory compounds.

Siete Tortilla

Siete’s tortillas are grain free and are a healthier approach to normal tortillas. They are made with fresh ingredients, non gmo, and gluten free. They also have dairy and soy free options.

Primal Buffalo Sauce

While Buffalo sauce may not sound the healthiest, Primal’s Buffalo sauce is certainly a healthier option. It is made with healthy non inflammatory oils, little sugar, and real ingredients that make you feel good. Plus, it adds a whole lot of flavor to your meal.

  • Chicken Seasoning

Instructions

    First cook chicken if not prepped!

  1. 1. Preheat oven to 400 degrees.
  2. 2. Cut chicken breast in half and season with salt, pepper, garlic powder, cumin, & paprika.
  3. 3. Cook for 20 minutes and flip halfway through.
  4. Let’s assemble the tacos!

  5. 1. Toast Siete tortillas on low heat.
  6. 2. Spread plain greek yogurt on tortillas.
  7. 3. Add a handful of spinach on each tortilla.
  8. 4. Add avocado.
  9. 5. Then add the chicken.
  10. 6. Lastly, drizzle buffalo sauce on taco and add pico or dip in salsa!
  11. 7. Serve & enjoy!

Notes

  • Turkey, salmon or beef will also work great!
  • Some other toppings to add are chickpeas, black beans, and cilantro!
  • This is perfect is you have leftover chicken or meat.
  • Feel free to use any sauce, buffalo is my favorite!
  • Make sure to toast the tortillas for a couple minutes on each side.
