Muffins are such a simple treat, but unfortunately most store bought muffins are filled with unnecessary additives and sugars.

These healthy blueberry muffins are packed with nutrient dense ingredients to leave you full and energized! They can be enjoyed by anyone, whether you’re an athlete, gym rat, or someone who just loves blueberry muffins!

Blueberry Muffin Ingredients

Healthy Protein Sources:

-Plain Greek Yogurt

-Whole Milk

-Egg

Healthy Carb Sources:

-Oats

-Whole Wheat Flour

-Honey

-Blueberries

Healthy Fat Sources:

-Olive Oil

-Whole Milk

Sometimes you may want to switch it up!

Blueberry Muffins Substitutions:

Plain Greek Yogurt- vanilla greek yogurt, plain yogurt, cottage cheese, protein powder (if you add protein powder add more water)

Whole Milk– 2% milk, plant based milks (almond, cashew, oat milk)

Egg- mashed banana, apple sauce, flax egg

Whole Wheat Flour- almond flour, coconut flour, regular flour

Honey- agave syrup, maple syrup

Extra-Virgin Olive Oil- avocado oil, coconut oil

Blueberry Muffin Ingredient Benefits

Greek Yogurt- Excellent source of protein and calcium, plus it provides a complete source of essential amino acids. I use plain greek yogurt and mix it with honey (a natural sweetener) for full health benefits!

Whole Milk- Rich in essential nutrients such as calcium, vitamin D, vitamin A, and vitamin K. These nutrients are crucial for maintaining healthy bones, teeth, and overall immune function. The saturated fat in whole milk contains fatty acids that are important for brain development and function. These fatty acids play a role in maintaining healthy cell membranes and supporting cognitive health.

Oats- One of the healthiest grains we can consume. It is a good source of carbs and contain many B vitamins, to help fuel energy. The fiber content is good for gut health and can help decrease cholesterol.

Whole Wheat Flour- A good source of carbohydrates, which the body uses for energy. It also contains protein which is an important macronutrient. Wheat flour is high in fiber, which aids in digestion, and also contains antioxidants and minerals.

Egg- A complete protein containing 8 grams protein per egg, similar to the amount of protein in 1 ounce of meat. Eggs are high in selenium, choline, and Vitamins B-12 and B-7. Whole eggs can be substituted with 3 egg whites 1/4 cup egg substitute.

Honey- Contains antioxidants, minerals, and enzymes. It is also shown that honey can soothe coughs, sore throats and treat wounds. Plus, it is super easy to add honey in your diet, and pairs well with yogurt, oats, baking, etc.

Extra-Virgin Olive Oil- A great healthy fat source rich in monounsaturated fat. It also is loaded with antioxidants and contains Vitamin E & K. It’s also been shown to reduce inflammation and cut the risk of heart disease and stroke.

Ingredients

Instructions

  1. Preheat oven to 375 degrees
  2. Spray muffin pan or add muffin
    liners.
  3. Combine wet ingredients in medium
    bowl and whisk together.
  4. Combine dry ingredients in a large
    bowl.
  5. Add wet to dry ingredients and mix
    until dough forms.
  6. Add frozen blueberries and mix into
    dough.
  7. Scoop dough into liners and fill
    approximately 3/4 full.
  8. Bake for 18-20 minutes.
  9. Let cool for 15-20 min.
  10. Serve & enjoy!

Notes

  • Store in fridge (3-5 days) or freezer
  • Make sure to spray pan or use muffin liners
  • You can use fresh blueberries or frozen
