This healthy breakfast is great for busy mornings because it takes less than 10 minutes to make. No more skipping breakfast when you have this quick and easy recipe!

It’s a balanced breakfast containing a carb, fat, and protein leaving you feeling full and satisfied. You can even prep it the night before and heat it up in the morning!

My favorite english muffins are from the brand Ezekiel 4:9. They are made with great ingredients, minimally processed and so delicious! I usually get the 7-Sprouted Grains English Muffins, but there are so many different kinds! Dave’s Killer Bread also has amazing english muffins as well!

I love any food with avocado because not only is it tasty, but it is so good for you! Avocados are filled with omega 3 fatty acids, which prevent inflammation. There has been lots of beneficial research on the importance of omega 3 fatty acids.

Unfortunately, in the US most people don’t get enough omega 3 fatty acids; however, avocados provide a great source of Omega 3s to fuel your body with healthy fats!

If you’re not a huge fan of avocado, add everything seasoning, salt, pepper, tomato, eggs, and balsamic glaze to minimize the taste!

I think this combination is so delicious and will make you love breakfast food!

This recipe is very versatile and can be made with so many combinations!

Avocado & Egg Ingredients & Tips

English Muffins: You need one english muffin! Try to look for minimally processed brands with good ingredients, my favorites are Ezekiel 4:9 and Dave’s Killer Bread!

Substitutions: Any type of bread or bagel

Avocado: Try to look for organic for full health benefits. Avocados come in large and small (I prefer the large because they have a better consistency). I usually use 1 full small one or half of a large one for this recipe!

Substitutions: Cream cheese or cottage cheese

Tomato: Completely optional but adds more flavor!

Substitutions: Cucumber

Egg: I use 2 eggs! You can make them whatever way you like (my favorite is over easy) some great options are hard boiled, scrambled, or sunny side up! You can also use just egg whites if you don’t like the yokes or just want a lower calorie option!

Substitutions: Turkey bacon, regular bacon, sausage, turkey sausage

Balsamic glaze: This is optional, but adds tasty flavor! My favorite brand is Trader Joe’s Balsamic Glaze!

Substitutions: Buffalo sauce, hot sauce, or balsamic vinegar

How Each Ingredient Benefits Us

English Muffins- A whole grain english muffin is a great complex carbohydrate. It provides a variety of B vitamins (B1, B2, Folic Acid, B6) and is a great energy source.

Avocado– High in healthy fats, fiber, potassium, magnesium, folate, and vitamins C, K, E and B6. Avocados have been found to have positive links to reducing risk of heart disease and are beneficial for gut health and are high in anti-inflammatory compounds.


Tomato
– Packed with vitamin C, beta carotene, potassium and an important phytonutrient called lycopene, which has been shown to reduce risk of heart disease and cancer. Tomatoes are low in calories and a perfect add-on to many food dishes. Choose ripe tomatoes to maximize nutritional benefits.

Eggs– A complete protein containing 8 grams protein per egg, similar to the amount of protein in 1 ounce of meat. Eggs are high in selenium, choline, and Vitamins B-12 and B-7. Whole eggs can be substituted with 3 egg whites 1/4 cup egg substitute.

Balsamic glaze– It can help aid indigestion because it contains acetic acid and probiotics which can improve gut health.

  3. Toast english muffin for 3-5 minutes.
  4. Add avocado, tomato slices, seasoning, and eggs to english muffin.
  5. Drizzle balsamic glaze on top.
  6. Serve & enjoy!

  • You can use any type of bread or bagel as well!
  • You can even make this into a sandwich!
  • Feel free to cook the eggs to your liking!
  • Instead of avocado you can use cream cheese or cottage cheese.
