Are you looking for a quick healthy snack? Well, these chocolate rice cakes are perfect! They are crunchy, sweet, and delicious. This only take 5 minutes to assemble, and all you need is a few simple ingredients!

I don’t know about you, but I love having something sweet after dinner. These are a great option because they’re sweet, but light on your stomach so you don’t feel too full. It’s a perfect light snack to satisfy your sweet tooth!

These chocolate rice cakes would also be a great pre workout snack, or just a light pick-me-up snack.

One thing I love about rice cakes is how versatile you can make them! They’re so easy to switch up and create different combinations! I used banana, cacao nibs and honey for my topping but there are so many different options!

Other Toppings You Can Use:

  • strawberries
  • blueberries
  • raspberries
  • coconut shreds
  • granola
  • crushed pecans, almonds, etc
  • chia seeds
  • agave syrup

Chocolate Rice Cake Ingredients & Substitutions

Rice Cakes- I use 2 regular rice cakes. You can also use rice cake thins!

Substitutions- chocolate rice cakes, english muffins, bread

Powdered Peanut Butter- I love to mix cacao powder with powdered peanut butter for more flavor. You can also use regular peanut butter or any nut butter.

Substitutions- regular peanut butter, almond butter, cashew butter, greek yogurt or plant based yogurt

Cacao Powder- The holy grail of the recipe, it’s what makes the chocolate flavor. You can also use cocoa powder, but I like cacao powder because it is healthier.

Substitutions: cocoa powder, melted milk or dark chocolate

Banana- I love to add fruit on rice cakes, it adds so much flavor. Plus, you get extra nutritional benefits! Bananas are one of my favorite fruits on rice cakes!

Substitutions: strawberries, raspberries, blueberries

Cacao Nibs- More chocolate? Yes please! Of course, you can add other toppings, but what’s chocolate rice cakes without a lot of chocolate!

Substitutions: coconut flakes, crushed pecans or almonds, chia seeds, hemp seeds.

Honey- A natural sweetener that adds more sweetness to the rice cakes.

Substitutions: Agave Syrup

How Each Ingredient Benefits Us

Rice Cakes- Low calories and don’t have much nutritional value; however, they are perfect for adding other great nutritional foods to create a balanced snack. Since plain rice cakes have little flavor, you can add any combination of spreads, fruits, & veggies to make a sweet or savory snack. They are extremely versatile and can be adjusted to whatever you’re craving.

Peanut Butter Powder- Another great source of protein without the fat content of peanut butter, because the peanuts are roasted, ground and de-fatted. It provides a good source or protein without a lot of added sugar and can be added to smoothies, liquid drinks or even food. The taste will be more mild than peanut butter.

Cacao Powder- Cacao beans processed at a low temperature and milled become cacao. They can be bitter in flavor compared to cocoa powder. It contains potassium and magnesium as well as 50mg caffeine in 2 TB- keep that in mind if caffeine sensitive.

Bananas- Rich in nutrients and contain a good amount of fiber, and carbs. They are full of antioxidants which are shown to aid digestion. Not to mention, they also help you feel fuller, and are the perfect food for athletes.

Cacao Nibs- Crumbled bits of dried cacao beans, they also contain antioxidants and fiber. Cacao nibs contain nutrients such as iron, magnesium, and potassium.

Honey- Contains antioxidants, minerals, and enzymes. It is also shown that honey can soothe coughs, sore throats and treat wounds. Plus, it is super easy to add honey in your diet, and pairs well with yogurt, oats, baking, etc.

Instructions

  1. Mix powder peanut butter, cacao powder, and water in a small bowl. (make sure to gradually add water)
  2. Spread mix on rice cakes.
  3. Add 1/2 chopped banana, cacao nibs, and honey.
  4. Serve & enjoy!

Notes

  • Use chocolate rice cakes for more chocolate!
  • Instead of powder peanut butter you can use regular or greek yogurt.
  • Strawberries, blueberries, and raspberries would also work great.
  • You can use cocoa powder instead of cacao powder.
  • Make sure to gradually add water to mix so it’s not to liquidy.
