Ripe Bananas– preferably over ripe to allow for a sweet and rich taste. They are also easier to mash than regular bananas.

Oat Flour or Oats- If you don’t have oat flour just blend 2 cups of oats in a food processor!

Eggs- Great nutritional value, and also boosts flavor, richness, and structure! (if you are vegan you can use plant based yogurt, applesauce, or flax seed)

Brown Sugar- Adds flavor & moistness!

Instructions

  1. Preheat oven to 350.
  2. If you don’t have oat flour blend oats in a food processor until it has a flour consistency.
  3. Combine bananas, oat flour, eggs, brown sugar, coconut oil, cinnamon, and baking soda in a large mixing bowl.
  4. Once ingredients are mixed, add dark chocolate chips and combine.
  5. Pour into a 8×4 pan with parchment paper.
  6. Bake for 45-50 minutes.
  7. Cool for 15-20 minutes.
  8. Serve & enjoy!

Notes

  • To allow the top not to burn, place foil on top of the pan!
  • Oat flour can be substituted with almond flour, coconut flour, all purpose flour, and wheat flour.
  • Eggs can be substituted with unsweetened apple sauce, yogurt, and ground flaxseed.
  • Brown sugar can be substituted with monk fruit, coconut sugar, honey, agave syrup, or maple syrup.
  • Instead of coconut oil try butter or avocado oil.
