Pineapple Salsa Tacos

Tacos have to be one of my favorite recipes! They are quick to assemble, especially when you have leftover chicken and veggies in your fridge. It took me only 5 minutes to make these pineapple salsa tacos, all I had to do was heat a few ingredients.

My favorite part of these tacos is the pineapple salsa on top because it adds a sweet taste to the spice. All you have to is dice pineapple and add it to salsa or you can even buy salsa with pineapple in it! If your feeling up try to make your own pineapple salsa.

My favorite salsa brand is Fresh Cravings, it’s affordable, healthy, and they have so many different flavors. I love the chunky spicy flavor and their pico!

Plain greek yogurt is a healthier substitute for sour cream. It’s a lot lighter on the stomach and has extra protein! Plus, it’s better for gut health!

It’s important to know that a lot of tortillas at the store are filled with additives and inflammatory ingredients. I try to look for tortillas that are minimally processed and filled with better ingredients. Some of my favorite brands are Siete, Ezekiel 4:9, & La Tortilla Factory. These can be found in the freezer section of the store.

Pineapple Salsa Taco Ingredients

  • Tortillas (I used La Tortilla Factory)
  • Plain Greek Yogurt (tip: look for one ingredient)
  • Spinach
  • Peppers
  • Avocado
  • Grilled Chicken
  • Salsa
  • Pineapple
  • Lime

How Each Ingredient Benefits Us

Tortillas- A great source of carbohydrates, and sometimes protein depending on the brand. It’s important to buy minimally processed tortillas with good ingredients for full health benefits.

Greek Yogurt- Excellent source of protein and calcium, plus it provides a complete source of essential amino acids.

Spinach- A vegetable full of insoluble fiber. It contains vitamins and minerals including Vitamin A, C, K, iron and calcium. It also contains plant compounds including quercetin and lutein and has a host of health benefits such as reducing cancer risk, oxidative stress and blood pressure.

Bell Peppers- A low calorie vegetable that add a lot of flavor. They provide a good source of Vitamin C and beta carotene. Red peppers are actually green peppers that were left on the vine longer and therefore have a better nutritional profile.

Avocado- They are high in healthy fats, fiber, potassium, magnesium, folate, and vitamins C, K, E and B6. Avocados have been found to have positive links to reducing risk of heart disease and are beneficial for gut health and are high in anti-inflammatory compounds.

Chicken- A low fat meat that is a great protein source in a variety of recipes. It is full of B vitamins and contains phosphorus and selenium.

Salsa- A great low calorie topping that is perfect for dip or on top of bowls. It adds a ton of flavor and is also contains a good amount of Vitamin C from lime juice, tomatoes, and onions.

Pineapple- Contains lots of nutrients, antioxidants and enzymes that can protect against inflammation and disease. It’s rich in vitamin C which is essential for immune health, growth, development, and iron absorption. It’s also been used in traditional medicine for centuries.

Lime- Lime is a citrus fruit that contains a high level of vitamin C, which can help protect against infection, and speed up the body’s healing process. It also helps fight infection and immune function. Plus, it is so tasty on top of dishes.

Pineapple Salsa Taco Ingredient Substitutes:

  • Instead of greek yogurt you can use sour cream (greek yogurt is a healthier option though).
  • Spinach can be switched with lettuce or kale.
  • Instead of peppers you can use corn or black beans.
  • Avocado is optional but adds flavor and healthy fats.
  • Instead of chicken you can use ground turkey, grass fed beef, fish, or tofu if you want a vegetarian option.
  • Salsa can be substituted with pico.

Ingredients

  • Chicken Spices

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut chicken in half and season with salt, pepper, paprika, cumin, and parsley.
  3. Cook for 15-20 minutes.
  4. Prep ingredients:
    dice bell peppers and pineapple.
    cut avocado in smaller sections.
    cut lime in 4ths.
  5. Heat up tortillas over stove (45 seconds per side).
  6. Add pineapple to salsa.
  7. Cut up chicken into smaller slices.
  8. Assemble Tacos:
    Spread greek yogurt, then add spinach, peppers, avocado, grilled chicken, and top it off with salsa.
  9. Squeeze lime on top of tacos.
  10. Serve & enjoy!

Notes

  • If you have chicken already cooked skip steps 1-3.
  • Use a minimally processed tortilla for full health benefits!
  • You can use fish, shrimp, steak, ground turkey or beef instead of chicken.
  • If you want a vegetarian option use tofu!
  • Make sure not to fill tortillas too much (it gets messy).
  • Feel free to customize these tacos to your liking!
